Curried Goat Tacos


Curried Goat Tacos : Serves 6-8

As needed Olive oil
1 each onion
1 lbs Goat Meat
1 head garlic
2 oz ginger
8 oz tomato paste
As needed: Cumin powder, coriander powder, garam masala, cayenne pepper, turmeric. (approx 1tsp each)
As needed: Salt and Pepper
1 each: bay leaf
As needed water.
½ bunch fresh cilantro
1 cup prepared guacamole
8 each prepared taco shells, or wonton skins fried
2 cups prepared coconut rice

In a large pot , add olive oil, and brown onions. Key to good color and flavor is caramelization of the onions. Add the goat meat, ginger, garlic, and stir around until the goat is starting to get seared, and nice color. Add the tomato paste, spices, and barely enough water to cover the meat. Allow to simmer slowly for 2-3 hours. (the slower and longer you cook it the better flavor you will enjoy)

Spoon curried goat mixture into taco shell, top with guacamole, and rest it against some coconut rice. sprinkle some fresh cilantro for garnish. You can also top this off with grated coconut, apples, raisins, or nuts.
